Tilapia & Roasted Asparagus
Tilapia Fillets
I based what I did with these a little off a recipe I saw on FoodNetwork.com. After rinsing & drying the fillets, I coated them lightly with flour, lawry's & pepper. I had about 1tbsp of olive oil in a pan on the stove over med. heat. All they needed was 2-3 minutes on each side. A nice, thin golden crust & they were good to go. (I always shy away from the whole "fried fish" or "fried anything" idea, but this was so light & such a minimal amount of oil, it was perfect.) I placed them on a paper towel that I had on a baking sheet & placed it in a warm oven. I then added 1tbsp of butter to the same pan as the fish & let it melt over low heat. Once melted, I added one clove of minced garlic & let it brown. I removed the pan from the heat & added 2tbsp of lemon juice, then poured the sauce over the fish. YUM!
Roasted Asparagus
Easy... one bunch of asparagus, 4 pounded cloves of garlic & a little sesame seed oil. Toss together, add a pinch of salt & pepper, then roast in a 400 degree oven for 10 minutes... eat!
Dessert
Segmented orange (courtesy of our first Specialty Produce Farmer's Market Bag) & chopped strawberries drizzled with chocolate... just a little for my sweet tooth!
Loved it all. This is one meal that will be added to the Woodall Dinner Rotation.
