Yes, this dinner was as rich and delicious as it sounds! Instead of using individual chicken breasts, I used a whole one and just folded the breasts on top of each other when I baked the chicken. I seared the breast first in the butter, but honestly felt that I didn't need as much butter as the recipe called for... just about half for next time.
The blue cheese butter didn't spread well onto the bread. I may save it next time for another use. But the sauce was AMAZING! With the tang of the blue cheese, then adding in lemon juice and white wine... WOW. Both Mike & I loved it. The plain green beans really rounded out this dish.
Catering Notes:
- Great dinner for a couple
- Use a baguette for the bread next time instead of sourdough and just lightly toast for flavor, not crunch
- The pan from the sauce makes amazing eggs the next morning as well.
