So I made this for Mike & I the other night. It was a recipe that I saw in a magazine & then added it to my online recipe book. We both enjoyed it, him more than me, but honestly, it wasn't my favorite.

I think the deal was with the pasta. Because I used the Wonton Wrappers on top of each other, there was quite a bit of tasteless pasta around the edges& it really made it a bit too chewy. The stuffing was very tasty. I would, however, use a cream cheese/sour cream mixture next time instead of ricotta. The ricotta just became too gritty for my palate. I also wasn't a big fan of using just plain marinara sauce. I think for next time, I will change the cheese filling option as well as to just put spinach in the actual ravioli, then add the sausage to the sauce.

Catering Notes:
- Not a good idea for catering as the ravioli stick and would not travel well before cooking
- After cooking, they become even more sticky. Basically just a big mass on your plate.
** Need to figure out a way to not have the ravioli stick to each other after they are cooked. Maybe try a drizzle of olive oil after they cook.**
